Clementine-Mint Sparkler

Ice cubes
12 mint leaves, finely shredded, plus 2 whole leaves for garnish
1/4 c fresh lemon juice
1 c fresh Clementine mandarin juice
1 bottle sparkling water
Clementine mandarin tops or slices for garnish
1. Fill 2 highball or other tall glasses with ice. Divide shredded mint between glasses. Pour half of lemon juice and half of Clementine juice into each glass. Top with sparkling water and stir well.
2. Garnish each glass with Clementine mandarin top and whole mint leaf. Serve at once.
