Chocolate Yogurt with Fresh Berries

Recipe from Enlightened Chocolate by Camilla V. Saulsbury

I am crazy for yogurt—I can hardly imagine a day without it. And while I’ll eat it plain, sweetened or flavored most any way, I think this chocolate yogurt trumps all, especially when sweetened with honey and topped with berries.

2 cups fat-free plain yogurt
3 tablespoons unsweetened cocoa powder (not Dutch process)
1/4 cup honey
1 teaspoon vanilla extract
1/2 cup assorted fresh or frozen, thawed berries (e.g., raspberries, blueberries, or sliced strawberries)

In a medium bowl whisk the yogurt, cocoa powder, honey and vanilla until well blended and smooth. Divide yogurt between 2 bowls and top each with 1/4 cup berries. Makes 2 servings.

Cook’s Note: The yogurt may be prepared ahead of time and stored in the refrigerator, in a covered container, for up to 1 week. Stir before serving and top with berries.
